                                     BOX KACHORI     

                                           ( WHEAT VEG PUFF )

                               Box kachori is an Indian snack recipe made with wheat flour and vegetables. This is a fried puff which is crispy outside and soft inside. This is a tea time snack and may be eaten for breakfast also.

INGREDIENTS

FOR DOUGH : 

  • Wheat flour  - 1 cup
  • Semolina - 1/2 cup
  • Oil - 1/4 cup
  • Ghee - 1 tbsp
  • Salt 
  • Water

FOR STUFFING : 

  • Onion - 1
  • Carrot - 1
  • Potato boiled and mashed - 2
  • Cilantro, Mint, Fenugreek leaves - Handful
  • Crushed Ginger garlic - 1 tbsp
  • Chili powder - 1 tsp
  • Chat masala - 1/4 tsp
  • Garam masala - 1/4 tsp
  • Turmeric powder - 1/4 tsp
  • A squeeze of Lemon

METHOD OF PREPARATION

STEP 1: Take a bowl, Add wheat flour; Semolina; Salt; Oil; Ghee and mix well.

STEP 2 : Add water gradually into the flour and make a soft dough.

STEP 3 : Add a spoon of oil and let it sit for 10 mins.

STEP 4 : Heat the pan with 2 tbsp oil . When the oil becomes hot, add onions and saute.

STEP 5 : Add the crushed Ginger garlic or Ginger garlic paste and saute till the raw smell goes.

STEP 6 : Add finely chopped carrot and green chili.

STEP 7 : Add the masalas one by one and mix.

STEP 8 : Now add the mashed potatoes, salt, coriander, mint and fenugreek leaves.

STEP 9 : The stuffing is ready, switch off the flame and let it cool.

STEP 10 : After 10 mins, Divide the dough and make like chappati.

STEP 11 : Cut them into rectangles and keep a spoon of stuffing at the middle.

STEP 12 : Apply flour paste on all sides, Fold and press the sides with fork.

STEP 13 : Deep fry and serve hot.
